Grated Root Salad
2 or 3 Carrots
1 medium to large Beet or 2 small Beets
1 medium Kohlrabi or small head of Purple or Green Cabbage
1/4 C. or more of chopped flat leaf Parsley
Grate above veggies into a bowl. Toss with flat leaf Parsley.
Make a dressing with equal parts mayonnaise, plain yogurt and cider vinegar.
Add a teaspoon sugar or honey and salt and pepper to taste.
This salad is wonderful as a topping for burgers and hotdogs or as a pita sandwich filling.
