Beets Aglow

4 c. cooked beets, sliced or small whole
2 heaping tsp. arrowroot powder or cornstarch
1/4 c. beet juice
3/4 c. orange juice
1/4 c. lemon juice
2 Tbs. cider vinegar
1 1/2 Tbs. raw honey
1/2 tsp. sea salt
2 Tbs. butter
1 Tbs. grated orange peel (zest only)

In a large pot, mix arrowroot with beet juice and stir until smooth. Add orange juice, lemon juice, vinegar, honey, and sea salt. Cook until liquid is clear and thickened. Add butter, orange peel, and beets.
Serve hot.
Makes 6 servings.
