Wilted Greens

4 Tbls unsalted butter
1 large onion, minced
1 large garlic clove, minced
2 medium tomatoes, peeled, seeded and roughly chopped
1/2 cup chopped fresh basil
1/4 tsp. ground ginger
4-5 cups trimmed, roughly chopped mixed greens (such as chard, collards, turnip greens, mustard greens…)
Salt and pepper

Melt butter in large skillet over medium-low heat. Stir in onion and cook for 1 min. Stir in garlic and cook until golden (about 5 mins) Add tomatoes, basil and ginger. Cook uncovered stirring occasionally, until slightly thickened, about 5 mins. Stir in the greens and cook, covered, until wilted, about 3-4 mins. Add salt and pepper to taste. Serve hot or at room temp. Serves 4
