Recipes :: EggplantBaba Ganoush1 1/2 lb. eggplant Preheat oven to 400 degrees F. Use a fork to prick eggplant all over. Bake whole about 30 minutes, until tender. Remove from oven, cut in half. Scoop out the flesh and blend it in a food processor with the lemon juice until smooth. Mash the garlic with salt and combine with eggplant and tahini. Allow the mixture to cool, then stir in the parsley and pine nuts. Before serving, drizzle with the olive oil. Serve with pita bread, pita chips, tortilla chips, pretzels or veggies. |
