Eggplant with Cashews
4 c. diced erda eggplant
2-3 c. diced onion
4 diced garlic cloves
1/4+ c. olive oil
1/8 c. soy sauce
1/8 c. rice vinegar
1/8 c. sugar
1/2 c. raw cashews
1. Saute eggplant, onion and garlic in a good amount of olive oil over medium heat for about 10 minutes, stirring now and then. Then add more olive oil to your liking and let saute about 10 more minutes, again stir now and then.
2. Add soy sauce, rice vinegar and sugar. Stir well and let saute anywhere from 10 to 20 more minutes. Taste it along the way to test the eggplant's tenderness. When it's nice and soft, it's done.
3. Stir in the cashews and turn off heat. Let the cashews warm up in there for about 5 minutes.
4. Serve over brown rice or flat rice noodles. And don't forget the hot sauce!
